Wolf & Woman Syrah is a captivating blend, showcasing grapes from two distinct vineyards. The first hails from northwest of Malmesbury, where vines thrive in rich, red, iron-rich soils. The second vineyard is nestled near the Riebeekberg Mountain, its grapes rooted in unique schist soils.
Crafted with meticulous care, all grapes were hand-picked and placed into crates before a 24-hour rest in a cold room. The following day, bunch sorting ensured only the finest grapes proceeded to open-top fermenters. Here, 80% of the grapes underwent a three-day cold soak before natural fermentation began. To enhance extraction, the wine received two punch-downs daily. After fermentation, the wine remained on its skins for 12 days, then was gently pressed and transferred to 500L old oak barrels. This vintage Wolf & Woman Syrah matured for 10 months, allowing its character to fully develop.
