Discover the Neil Ellis The Left Bank Cabernet Sauvignon Merlot 2021, a refined and elegant red blend. It embodies the timeless tradition of a Bordeaux-style wine. It is crafted with the best of Stellenbosch terroir. Ultimately, this vintage showcases the exceptional quality Neil Ellis is renowned for, offering a sophisticated and accessible drinking experience.

Tasting Profile

This wine presents a vibrant, deep, dark colour. On the nose, it offers complex aromas of dark berries, ripe raspberries, and a subtle hint of classic pencil shavings. The palate is elegant and well-structured. Furthermore, it has a generous core of juicy dark fruit. It is beautifully balanced with fine-grained tannins. These provide a smooth, lingering finish. Therefore, while it has the structure to age gracefully, it is remarkably approachable and enjoyable now.

The Winemaking & Terroir

The grapes for this blend are meticulously sourced. They come from some of the coolest, south-west facing slopes in the Stellenbosch region. Indeed, this is a renowned area for producing world-class Bordeaux varietals. The vineyards, with their decomposed granite soils, benefit from the cooling southerly breezes of the Atlantic. Consequently, these breezes contribute to the wine’s freshness and balanced acidity. The 2021 vintage was carefully fermented. It then matured for 17 months in French oak barrels (30% new). As a result, this process adds complexity and a delicate spice to the final blend.

Perfect Pairings & Occasions

Neil Ellis The Left Bank Cabernet Sauvignon Merlot 2021 is a versatile food wine. Its elegant structure and fine tannins make it an ideal partner for a variety of dishes. For example, it pairs with grilled red meat, classic beef fillet, roast lamb, and hearty game dishes. It also pairs beautifully with rich, savoury cheeses. Decanting for a short while before serving will enhance its aromatic profile.
