This captivating white blend features 44% Grenache Blanc, 34% Chenin Blanc, 11% Roussanne and 11% Verdelho
Sourced from high-density bush vines rooted in schist soil, these vines yield an average of 8 tons per hectare. Contributing to the wine’s concentrated flavors and vibrant profile.
We handpick all grapes in the early morning and cool them overnight to 5°C. Each component vary ripeness levels, ensuring the final blend’s harmony. We press the grapes separately and as whole clusters, then settle the free-run juice for 24 hours at 8°C in a stainless-steel tank (we use no enzymes). First, we rack the juice from the thick lees into 2000L cement tanks for natural fermentation. Consequently, this process can take up to three months. To preserve natural acidity, no malolactic fermentation occurs. After fermentation, the wine receives a low dose of sulphur and rests on its lees, spending a total of 7 months in cement tanks before blending and bottling.
