Vinification & Maturation: Harvested late March, crushed into cement fermenters, and cold-soaked for 2 days. Fermented 9 days with Pinot yeast and gentle pigeage. Aged 18 months in oak (500L puncheons, 300L/225L hogsheads) plus 6 months in Inox tanks. Bottled unfined and unfiltered. Pair with slow-roasted leg of lamb, waterblommetjiebredie, or char-grilled sirloin. Serve lightly chilled, decanted in youth, or cellared through 2030+.
