The Fledge & Co Oom Koos Verdelho honours winemaking partner Margaux Nel’s great-grandfather, celebrating Iberian grape varieties that thrive in Calitzdorp. The Fledge & Co Oom Koos Verdelho relies on Verdelho fruit from the MooiDraai vineyard, which sits in ancient alluvial soils along the Klein Riviertjie in the Klein Karoo.
- Aroma: Opens with roasted almond, burnt butter, and toffee, evolving into green apple, lime cordial, preserved lemon, crushed seashell, and salty sea spray.
- Palate: Shows a lean yet zesty profile, driven by bright green and yellow citrus notes.
- Finish: Delivers a salty lilt, citrus bite, and gentle tannin tug that leaves a mouth-watering impression.
The team hand-harvests the fruit and ferments it 100% whole-bunch with skins, stems, and pips for 10 days. They foot-press the grapes and age the wine in barrels for 8 months. Finally, they bottle the wine direct from cask—unfined and unfiltered—using only minimal additions of yeast and sulfur. Decant and serve chilled. This wine pairs brilliantly with braaied snoek, West Coast mussels, calamari steaks with mild peri-peri, fresh sushi, rustic poultry dishes, or artisanal cheese and charcuterie.
