Hand-harvested at dawn, 25% whole bunches underwent a cool fermentation with gentle foot pressing. The wine matured in an old 500L French oak barrel and a 54L demijohn before direct bottling—unfined and unfiltered. Serve lightly chilled and decanted. Pair with proper pizza, rustic farm cuisine, or soft cheeses and charcuterie. Cellar for several years.
