Winemakers select whole bunches before spontaneous fermentation in conical foudre and open-top fermenters. Retaining 10% whole bunches adds herbal complexity and vibrant structure. Following basket pressing, the wine ages for 10 months in concrete eggs and neutral 500L barrels.
