The 2025 Vintage Profile

The name Sonvang translates to “Sun Catch” because this unique slope soaks up the intense afternoon sun. This specific aspect allows the grapes to achieve early maturity while beautifully preserving a fresh, firm natural acidity. The estate utilizes a complex array of resilient, future-oriented Mediterranean varieties planted together on weathered granite soils. The 2025 Sonvang proudly displays a customary Mediterranean and oriental spicy aromatic profile alongside deep, earthy undertones.

Artisanal Vinification & Ageing

The vineyard team performs multiple precise picks across the slope to harvest each variety at peak freshness. In the cellar, they ferment the grapes with 30% whole clusters and 70% destemmed fruit. The juice undergoes wild fermentation on the skins for 25 to 30 days. Next, workers press the grapes gently using an old, traditional basket press. The wine matures on its lees for 11 months inside concrete tanks and older wooden foudres. These neutral vessels prevent any unwanted oak flavors while allowing a very slow, controlled oxygen interaction. The winery bottles this highly collectible red blend directly from the fine lees.
