The juice spends about 30 days on the skins. Next, a traditional, old basket press extracts the liquid gently. The wine moves into 28-year-old conical wooden casks for maturation. These ancient, saturated staves impart absolutely no oak flavors. Instead, they promote a very slow, controlled reaction with oxygen. The wine ages on its fine lees for 11 months before spending one final month settling clean in a concrete tank. The team bottles this pristine 750ml masterpiece directly from the fine lees.
