They initially age the spirit in ex-bourbon barrels, often from Buffalo Trace. The whisky then undergoes finishing in ex-peated Islay quarter casks. The Penderyn Celt pours a light yellow or straw colour. The nose offers mild aromas of peat smoke and citrus zest. Notes of warm marmalade on toast and seaside brine also compete for attention. The palate begins with a great underlying sweetness. Smoky, slightly medicinal flavours then beautifully descend across the mid-palate. You will notice flavours of orchard fruit and vanilla. The finish is long, fresh, and lingering with a gentle, balanced peat smoke.
Penderyn uses a single copper pot still (Faraday Still) for its distillation. This modern process ensures a high-strength, fruity new-make spirit. They use Islay quarter casks for the peated finish. This allows for increased wood interaction and flavour integration.
