The 2022 vintage offers a beautiful, subtle copper hue. A period of seven days of skin contact before pressing gave the wine its haunting complexity and savoury grip. Fermentation occurred naturally using indigenous yeasts. The wine was aged for ten months on gross lees in older French oak barrels. This process adds a waxy mouthfeel and exceptional texture.
Aromas of orange rind, red apple, spice, and a hint of potpourri emerge on the nose. The palate shows satisfying density and weight. Punchy acidity provides a welcome freshness and bright focus. A long, intensely savoury and pithy finish makes this a superb food wine. Pair it with complex poultry dishes or rich, spiced seafood. This unique white offers superb aging potential.
