The nose is inviting, showing notes of toasted marshmallows, pomegranate, and spice. Aromas of hazelnut and nutmeg also add complexity. The palate is delicate, yet vibrant. You will taste buchu, prickly pear, and bright cherry fruit. Allspice and cardamom notes lead to a signature, savoury finish. Refined, chalky tannins provide excellent structure. Illimis Grenache Noir 2023 can be enjoyed now or cellared for up to 10 years. Pair it perfectly with seared tuna, duck, or Mediterranean dishes.
Grapes were hand-picked and included 60% whole bunches during fermentation. The wine underwent spontaneous fermentation for eleven days on the skins. It was aged in neutral 225-litre French oak barrels for seven months.
