The winemakers utilize traditional techniques to preserve the integrity of the fruit. They hand-harvest each site at dawn to maintain freshness and acidity. Most components undergo fermentation in seasoned 400L and 500L French oak casks using only neutral yeasts. The team allows the wine to rest on the fine lees for approximately 10 months. This patient process ensures a stable wine that requires no aggressive fining or filtration before bottling.
