Cascahuin 11 Brix Tequila Blanco is a unique, high-proof expression honoring the art of fermentation. Maestro Tequilero Salvador “Chava” Rosales created this special edition. The name “11 Brix” refers to the low sugar level of the fermented agave juice before distillation. This lower sugar content allows a purer, more complex agave character to shine. This exceptional Cascahuin spirit is additive-free and bottled at a robust 53% ABV.
This tequila offers an incredible, luxurious mouthfeel. The nose presents vibrant notes of cooked agave, citrus zest, and medicinal minerality. The palate delivers a beautiful blend of sweet, bright, and grassy flavors. You’ll find notes of grapefruit, pepper, and a subtle earthy complexity. The finish is long, warming, and shows the clean, undiluted essence of the agave.
Cascahuin crafted this tequila using 100% Blue Weber Agave. They cook the agave in traditional stone/brick ovens. Extraction occurs using a roller mill. The defining feature is the three-way fermentation. They divide the mosto (fermented juice) into three types of vessels: stainless steel, cement, and wood. Each vessel adds a different layer of flavor and texture. The three batches are combined and then distilled twice. The final spirit rests in a stainless steel tank for five months. They bottled the final spirit at still-strength without any dilution.
