The 2025 Vintage Profile

Fire By Night grows on a high Paardeberg ridge between 300 and 350 meters above sea level on the Nuwedam property. The ancient, deep-rooted bush vines thrive in pure decomposed granite soils, yielding grapes of absolute clarity and focus. The 2025 growing season showcases a highly precise, electric expression of this mythical terroir. The wine opens beautifully with an understated, haunting nose of lemon oil, native kapokbos fynbos, and fresh lime. Subtle, hidden echoes of wild honey add incredible aromatic layers to the glass.

Tasting Notes

  • Aroma: A hauntingly beautiful nose delivers vibrant notes of fresh lemon oil, wild lime leaf, and herbal kapokbos.

  • Palate: The attack feels bracing, mouthwatering, and intensely pithy. This electric Chenin flows into a remarkably long, fine, and ultra-focused finish.

Artisanal Vinification & Ageing

The winery team hand-sorts the estate fruit carefully before initiating a gentle whole-bunch pressing. They choose to keep the raw juice very cloudy and allow it to settle lightly without any artificial additions. A completely natural, spontaneous wild fermentation occurs inside a combination of concrete eggs, neutral foudres, and older wooden barrels. This slow fermentation process lasts for approximately one month. The wine matures on its primary fermentation lees for 12 months. It then rests in tank on fine lees for an additional five months without any fining prior to bottling.
