Cartology represents a vinous exploration and geographical tapestry of old Cape vineyards. The 2025 iteration utilizes nine distinct, 40-to-60-year-old Chenin Blanc vineyards alongside one ancient Semillon parcel. This specific growing season delivers added focus, exceptional structural tension, and dense flavor persistence. The nose opens beautifully with striking aromatics of clementine cake, naartjie peel, ripe pear, and wild fennel. Subtle layers of sweet herbs, peach, and flinty reduction follow closely behind to add magnificent complexity.

Artisanal Vinification & Ageing

The cellar team hand-sorts the fruit carefully before initiating a gentle, three-hour whole-bunch pressing. They lightly settle the raw juice naturally to preserve its cloudy, texturally rich state. A completely spontaneous fermentation occurs without any additions. This natural process takes place inside concrete eggs, old foudres, and neutral wooden barrels of varying sizes. The wine matures undisturbed on its fermentation lees for 12 months. It then rests in stainless steel tanks on fine lees for an additional five months before bottling completely unfined.
