A captivating blend, drawing character from two distinct vineyards. One is nestled in the Paardeberg region, flourishing in decomposed granite soils. The second vineyard, located northwest of Malmesbury, contributes grapes from its ferricrete soils.
They performed two separate pickings from each vineyard, allowing them to select berries with diverse characteristics. This meticulous approach in turn lends greater depth and complexity to the final blend. All grapes were hand-picked early in the morning, carefully packed into crates, and then rested in a cold room for 24 hours.
The following day, bunch sorting ensured only the finest grapes made it to the open-top fermenters. Here, a composition of 15% whole bunches and the remaining destemmed whole berries underwent a four-day cold soak before natural fermentation began, supported by one punch-down per day.
Once fermentation was complete, the wine remained on its skins for seven days before a light pressing. It was then transferred into a combination of old 300L and 500L barrels. The vintage matured for 10 months before being racked, blended, and finally bottled.
