WOLF & WOMAN Chenin Blanc is a meticulously crafted blend, drawing its essence from four distinct, old-vine vineyards. Three of these venerable vineyards are nestled in the Paardeberg region, flourishing in decomposed granite soils, with plantings dating back to 1984, 1980, and 1976. The fourth vineyard, established in 1981, lies north of Malmesbury, its grapes rooted in rich, red iron-rich soils. All four vineyards consist exclusively of dryland bush vines, yielding grapes of exceptional concentration and character.
Grapes are picked early in the morning, carefully packed into crates, and then spend 24 hours in a cold room. The following day, they undergo whole bunch pressing, and the juice is left to settle overnight without the use of enzymes. After 24 hours, the clarified juice is transferred to a combination of 500L old oak barrels and a concrete egg. Natural fermentation is allowed to occur, followed by malolactic fermentation. The wine then matures for 10 months on its lees before blending and bottling.
The final blend comprises 70% grapes from decomposed granite soils and 30% from red iron-rich soils. The decomposed granite components contribute a linear, mineral, and tight character, showcasing a white fruit spectrum that adds texture, freshness, and drive. Conversely, the iron-derived influences impart beautiful yellow-fruit aromatics and a sense of opulence to the wine.
