Winemaking Philosophy: The Heatherleigh Natural Sweet is crafted using a traditional Solera system. This continuous barrel ageing process blends various vintages within the same group of very old oak barrels (at least 10 years old), ensuring consistency and building complexity over 11 months of maturation. The sweetness is achieved naturally: grapes are left to raisin on the vine after their stems are pinched, concentrating sugars and flavors without the influence of Botrytis, which would yield a different style of richness.
