Appearance: The wine presents a bright, green-gold color in the glass.
Aroma: Classic Chardonnay aromas of citrus and ripe apple fill the air, complemented by creamy notes derived from lees contact.
Palate: The palate is bracing and mineral, with layers of succulent fruit flavors that are beautifully balanced by refreshing acidity. The wine finishes long and savory.
Winemaking: The wine undergoes a 24-hour settling period before being racked off the gross lees. Specific yeast strains are inoculated to initiate fermentation, which takes place at a controlled temperature between 12 and 17 degrees Celsius for two weeks. A partial malolactic fermentation softens the wine’s acidity. The wine is then racked off the lees and returned to the tank with fine lees for a period of 3 to 6 months, contributing to its complexity and texture.
