The unique “minty” character of this Cabernet Sauvignon is a fascinating natural phenomenon. Eucalyptus trees bordering the vineyard release a fragrant compound called Eucalyptol into the air. This compound is absorbed by the grapes’ outer layer and subsequently imparts its minty aroma to the wine during fermentation.

- Vintage Conditions: Wet, cool climate conditions allowed for replenished water reserves and a slow ripening period.
- Harvest Date: 18 March 2022
- Method: De-stemmed, hand-sorted grapes were crushed and pumped into stainless steel fermenters. Pump-overs were conducted for 10 days, followed by a 6-day maceration period before pressing. The wine was then racked into barrels for malolactic fermentation.
- Maturation: 18 months in barrel, with 40% new French oak and the balance in older barrels.
