Saxenburg Guinea Fowl Red 750ml

A blend consisting of 51% Cabernet Sauvignon, 17% Cabernet Franc, 17% Merlot, and 15% Malbec. Each component was picked separately at optimal ripeness. The grapes were then destemmed but not crushed, leaving the berries whole for a softer extraction. Fermentation took place separately in open-top fermenters, utilizing a combination of punch-downs and pump-overs, with most of the extraction occurring during the first half of the fermentation. After fermentation, the grapes were gently pressed and underwent natural malolactic fermentation (MLF) in the tank before being transferred to barrels for 12 months.
