The Palladius embodies a meticulous winemaking process, with grapes from 17 different vineyards undergoing careful sorting and whole-bunch pressing. The turbid juice naturally ferments in concrete eggs and clay amphoras, with consistent temperatures maintained. Fermentation can extend up to 18 months, with each vineyard’s fruit fermented in the same vessel year after year.
The wine matures for 12 months in these vessels, followed by an additional 12 months in large old foudres, bottled unfined and unfiltered after two years.
Over the past seven years, Palladius has seen remarkable growth in quality and refinement, largely due to viticultural improvements across its many vineyards, making it the largest expression of Swartland terroir in rgw Sadie portfolio.
The 2023 vintage displays an incredibly bright colour for a wine with 24 months of ageing. Its increased freshness comes from more acidic, lower-alcohol varieties. Expect lime zest and green apple aromatics with a persistent line of salinity. The palate reveals incredibly refined and balanced tannins, intertwined with fresh acidity and a long aftertaste.
This 2023 is potentially the wine of the vintage! We highly recommend ageing it for a minimum of 4-6 years to allow its full complexity to unfold.
