The Kokerboom represents a challenging yet rewarding winemaking journey. Grapes from the Citrusdal Mountains endure a long transport, arriving for overnight cooling. The next day, whole bunches are pressed, with the juice settling before moving to old foudres for slow, natural fermentation. This unique process, often lasting 6-8 months, extends into the following spring, with malolactic fermentation typically completing during this period.
The wine remains in cask on its fermentation lees for 12 months and is bottled directly from the lees.
Sourced from a vineyard with 80% white Green Grape (Semillon) and 20% red Green Grape (Semillon Gris) picked together, Kokerboom is one of Sadie’s richest wines, offering pure volume and massive texture. Its high ripeness is due to strong solar radiation.
The 2024 vintage shows typical waxy, lanolin characters of Semillon, but with added gingery, spicy aromatics and tropical granadilla undertones. On the palate, the tannins and phenolics are remarkably refined and elegant, making this a very fresh expression of this unique vineyard.
