Vineyard & Terroir: Chardonnay grapes were carefully selected from diverse terroirs across Cape Agulhas (62%), Robertson (23%), and Darling (15%). This multi-regional sourcing harnesses a spectrum of flavour and structural profiles. The cool-climate fruit from Cape Agulhas and Darling is complemented by Chardonnay from Robertson’s limestone-rich soils, resulting in a complex and exceptional wine.
Winemaking Philosophy: Hand-picked in the early morning, only the finest and healthiest bunches undergo whole-bunch pressing, with only the pure cuvée used. Most of the clear juice ferments in stainless steel, while a select portion ferments in traditional French oak barrels from Tonnellerie Artisanale de Champagne, adding complexity and depth. Individual wine parcels are meticulously tasted and selected for the final Blanc de Blancs blend. The wine undergoes secondary fermentation in the bottle, aging on its lees for six years to develop structure, palate weight, and its signature fine mousse. Traditional remuage and dégorgement remove the sediment, followed by six months of cork maturation.
Tasting Notes: This Cap Classique displays an enchanting luminous straw colour with persistent and extremely fine bubbles. The nose offers delicate aromas of white-fleshed fruit and a distinct mineral power, characteristic of iodized Chardonnays. The generous palate is structured by a chalky backbone, providing charm and precision. Classic yeasty tones unfold with layers of lime pith, citrus peel, and green almond, culminating in a comforting brioche finish. The experience is memorable, a precise Cap Classique with a firm, well-integrated mousse, persistent bubbles, and flavour – the hallmark of a great bottle-fermented sparkling wine.
