Winemakers used spontaneous wild fermentation. The wine spent ten months barrel aging in French oak. Partial malolactic fermentation occurred in the barrel.
The Off The Record Chenin Blanc 2023 has an attractive pale straw color. The nose leads with appealing citrus notes and hints of flint. The palate unfolds with a rich, creamy mouthfeel. Citrus, apple, and blossom flavors take center stage. Underlying minerality and gentle wooding contribute to its complexity. The wine finishes with a long, lingering taste.
