Herbarium is a unique Cape White blend crafted within Maanschijn’s historic building, a space that once served as a stable and later, home to Oom Sampie, a local who dried indigenous fynbos flowers within its walls for the market. This wine is a liquid homage to that rich heritage and the vibrant flora of the Walker Bay.
This distinctive blend features four varieties: Sauvignon Blanc, Chenin Blanc, Sémillon, and Chardonnay. All grapes are sourced from vineyards nestled in the cooler, southern Walker Bay wine district, surrounded by the abundant fynbos kingdom of the Cape.
The fruit was gently pressed, settled, and then racked into aged French oak casks. Fermentation occurred spontaneously, with the wine maturing for ten months on its fine lees. Finally, the wine was blended and bottled without fining, preserving its natural character and expression.
