Herbarium is a distinctive Cape Red blend, crafted within Maanschijn’s historic building – a space that once served as a stable and later, home to Oom Sampie, a local who dried indigenous fynbos flowers within its walls. This wine pays homage to that rich heritage and the vibrant flora of the Walker Bay.
This captivating red blend features three varieties: Syrah, Mourvèdre, and Cabernet Franc. All grapes are sourced from vineyards nestled in the cooler, southern Walker Bay wine district, surrounded by the abundant fynbos kingdom of the Cape.
The fruit was fermented spontaneously, with a portion undergoing whole-bunch fermentation, for thirty-three days before being pressed to aged French oak. Maturation lasted ten months in aged Burgundy casks. Finally, the wine was blended and bottled without fining, preserving its natural character and expression.
