This Brunch Club Méthode Ancestrale sparkling wine is made entirely from Sauvignon Blanc. The grapes were harvested earlier in the season to perfectly capture the bright, youthful flavors characteristic of a true brunch wine.
The whole-bunch fruit was gently pressed and allowed to settle overnight. Spontaneous fermentation proceeded at a low temperature for eight weeks before bottling. After five months on lees, this vibrant sparkling wine was disgorged.
