This elegant Cabernet Sauvignon hails from the cool, iron and granite-rich mid-slopes of the Helderberg Mountain in Stellenbosch, situated at an altitude of 300 meters. These unique vineyard conditions naturally imbue the grapes with the sophistication that defines our Cabernet Sauvignon style.
Upon arrival at the Leeu Passant winery in Franschhoek, the grapes were destemmed and fermented in tanks with indigenous yeasts and minimal sulphur. The wine underwent daily pump-overs for approximately 14 days, followed by an extended maceration period. It was then drained and pressed into barrels for initial maturation.
The wine was initially matured in 500L French oak barrels, with one-third being new. It was then racked and blended into larger format oak, where it remained for an additional sixteen months before bottling.
