The 100% Garnacha Peluda comes from a single vineyard established in 2018. These high-density bush vines, now 5 years old, thrive in red ironstone soil, yielding a concentrated 6 tons per hectare.
The grapes are meticulously handpicked in the early morning and cooled overnight to 5°C. A portion (60%) is then crushed and destemmed, while the remaining 40% undergoes whole-cluster fermentation in open fermenters. Natural fermentation is encouraged, with gentle punch-downs twice daily for optimal extraction. After fermentation, the wine remains on skins for an additional seven days before being pressed to neutral oak barrels for malolactic fermentation. It spends a total of 10 months in barrel before bottling, receiving only a low dose of sulphur after racking from the lees.
