Here, sustainable practices like mulching, manual weeding, and cover crops are essential to navigate the warm climate and nurture intensely flavoured grapes. In the cellar, the fruit was crushed, destemmed, and gently fermented in an open-top fermenter with minimal punch-downs, allowing its exuberant nature to shine.
