Terroir: Grown in the diverse Bottelary Ward, benefiting from varied slopes, aspects, elevations, and the cooling influences of False Bay and the Atlantic. The granitic hills and well-drained, acidic soils (including Oakleaf, Tukulu, Hutton, and Clovelly types) at altitudes of 150-400m contribute to the wine’s unique character.
Winemaking: Hand-harvested in the cool early mornings and further chilled, only the finest sorted grapes are gently processed. After cold soaking and pressing, the clear juice undergoes cold fermentation in stainless steel. Extended lees contact (9 months) and careful blending of individual vineyard blocks just before bottling enhance the wine’s complexity.
