Terroir: Sourced from the diverse Bottelary Hills, where varied slopes, aspects, elevations (150-400m), and soils (granitic, including Oakleaf, Tukulu, Hutton, Clovelly) benefit from the cooling influences of False Bay and the Atlantic, creating complex microclimates ideal for quality red grapes.
Winemaking: Hand-harvested in the cool morning, carefully sorted, and gently destemmed. Following a 1-2 week maceration and fermentation with punch-downs and pump-overs, the wine is gently pressed and aged in a combination of French oak barrels (500L) and flexcubes, undergoing malolactic fermentation. Individual vineyard blocks are vinified and aged separately before final blending.
