Terroir: Crafted from a South-West facing Chardonnay vineyard in the Bottelary Hills, benefiting from cooling breezes from False Bay and the Atlantic. Cool morning mists from the Atlantic promote slow, optimal ripening and enhanced flavour development in the granitic, well-drained soils.
Winemaking: Hand-harvested at dawn and gently whole-bunch pressed to extract the purest juice. Following cold and malolactic fermentation, the wine undergoes its second fermentation in the bottle, developing fine bubbles over three years on the lees before disgorgement.
