Vineyard:
Their Pinot Noir grapes hail from four distinct vineyards in Elgin, Durbanville, Stellenbosch, and Robertson, each contributing unique flavors and complexities to our vintage rosé. The Chardonnay grapes, sourced from their estate in Robertson, flourish in limestone-rich soils. All grapes were hand-harvested at dawn and gently whole-bunch pressed together.
Cellar Treatment:
In a South African first, Pinot Noir and Chardonnay grapes were co-pressed in a single press. This meticulous process, involving fractional recovery, ensured only the highest quality juice was used for fermentation. Following fermentation, the wine was lightly fined and bottled for secondary fermentation. After four years of lees aging, the wine was disgorged.
Tasting Notes:
This bubbly showcases a stunning salmon pink hue. The nose is captivating, with ripe blueberry notes and subtle spice from the Pinot Noir, intertwined with the creamy complexity of Chardonnay. The palate is a delightful dance of raspberry fruit and honeysuckle, supported by a persistent yet delicate mousse.
