Varietal: Chenin Blanc 64%, Sauvignon Blanc 29%, Riesling 7%
Vineyard: Sourced from three high-density planted single vineyards situated on ferricrete and shale soils in one of South Africa’s coolest wine-growing regions. Viticultural practices prioritize lower yields to produce concentrated fruit that showcases the unique characteristics of each white grape variety.
Vinification: Hand-picked and sorted grapes undergo spontaneous fermentation with minimal intervention, allowing the wines to express their inherent qualities and balance. The wines are matured for 10 months in neutral vessels before being blended and left to settle for an additional 3 months. Bottled without fining or excessive filtration.
Tasting Notes: The cool climate Chenin Blanc, with its delicate floral aromas, forms the foundation of this blend. Sancerre-styled Sauvignon Blanc adds flinty minerality and structure, while a small component of Riesling contributes its characteristic opulence, waxy texture, and bracing acidity. Yellow fruit, citrus, beeswax, ginger, and fennel spice are seamlessly interwoven, along with a hint of resinous floral notes. The palate is multi-layered and concentrated, with well-balanced acidity and a lingering saline finish. This wine will continue to develop complexity over the next 10 years.
