Sourced from Crystallum’s own Shaw’s Mountain vineyard, located just outside the Hemel en Aarde Valley, the Litigo is a wine named after the legal term for ‘discussion.’ It is crafted in collaboration with lawyer Eben van Wyk.
Fermented using only native yeasts in stainless steel tanks, the wine included 75% whole bunches while the rest were de-stemmed but left as whole berries. It spent a total of four weeks on the skins before being aged in French and Hungarian oak barrels (20% new) for 11 months.
This deep, brooding vintage offers an enticing nose of purple fruits, mulberries, and black olives, complemented by notes of fennel, fynbos, and dark chocolate. The palate is dense and alluring, with fig, black cherry, and red plum fruit weight beautifully supported by grippy, textured tannins that add a touch of spice.
