Ferrum Chardonnay is crafted from grapes grown in a single vineyard located on Crystallum’s own property at Shaw’s Mountain, situated near Hermanus just outside the Hemel-en-Aarde region.
The wine underwent whole-bunch pressing without the addition of enzymes, and sulphites were added at pressing. Following an overnight rough-settling, the juice was transferred to barrels for spontaneous fermentation and aging, spanning 10 months. Aging occurred in 300 and 500-litre barrels, with 20% of them being new oak.
This captivating single-vineyard wine beautifully showcases the complexity of its origin. Its aromatic profile features greengage, quince, and blackcurrant leaf, complemented by notes of lemongrass and jasmine. The palate is vibrant and sharp, offering flavors of citrus, white pear, and aniseed. A puckering, wet stone texture provides a long, lingering finish, while skillful oak aging perfectly rounds out the wine’s edges.
