The Cartology only uses parcels that are dry farmed bush vines. The vines are at least 35 years old, with most being 40 to 50 years old. 94% Chenin Blanc & 6% Semillon makes up the blend. The grapes were whole bunch pressed, then wild fermented in cement eggs, clay pots, foudres and old barrels of various sizes. Fermentation lasts between 3 weeks and 11 months. Kept on the lees for 12 months, the wine is then rested in tank for another 5 months before being bottled.
